No Prep Greek Chicken Bowls

Summer is all about quick and easy meals that don’t heat up the kitchen -especially right now, when it’s a bazillion degrees out there! One of my favorite life hacks comes from the Whole30 diet. Whole30’ers are famous for “ingredient meals” or what I call “throw a bunch of things together and call it good.” This is one of those kinds of things but with a little flair you can pack a punch. Start with pre cooked/grilled chicken, or a rotisserie, and your prep is cut in half. I like to start the week off with grilled chicken in the fridge so that I have plenty for bowls like this, salads, tacos, chicken salad lettuce wraps…whatever. Cook some brown rice and *voila!* same thing, you’re good to go. I’m all about that cook-once-prep-all-week life!

 

Greek Chicken Bowls

Grab a bowl and add:

A Handful of Spinach or Chopped Romaine

Rotisserie Chicken or Grilled Greek Chicken

Cooked Brown Rice

Diced Cucumbers

Halved Cherry Tomatoes

Diced Mini or Bell Peppers

Store bought or Rhett’s Best Hummus

Store bought or Homemade Tzatziki Sauce (or even just a dollop of plain Greek yogurt)

Sliced Green Onions

Fresh Dill (this is AN ABSOLUTE MUST. Just trust me. Fresh herbs on anything is just better so please do whatever you can to make this happen.)

Salt and Pepper - Always. On everything. Taste, taste, taste. Seasoning makes or breaks a meal!
